Friday, January 7th -- Apple Crisp Recipe

First off -- Please remind me NEVER to head to the laundromat on Friday evening again!  I had thought it would be a good option.  After all, other people have social lives right?  WRONG!  First time I've had to wait for washers and dryers at the Hog Wash Laundromat in Hope, AR.  Eventually the task was completed and I made a quick stop at Wally World for some gas and a few miscellaneous items.

Now that my venting is complete for today I'd like to welcome our new readers.  It's so nice to get to know others who are out on the road.  I was sort of afraid I would be lonely on the road and drive poor Johnny batty with my need for social interaction, but I'm finding that this blog which we started intitially to keep friends and family abreast of what we're doing is actually a great way to get to know others with shared interests and running the roads. 

One of our newer readers, Margie of RV-Adventure of Margie and Roger, asked about how you make Apple Crisp in the crock pot, so I thought I would share the recipe I used.  I found it in one of those Fix-It and Forget it slow cooker cookbooks.  This one was from Michelle Strite of Goshen, Indiana.  It was a diabetic version and I changed it a bit, but it was pretty good. 

Apple Crisp
2/3 cup sugar (I used half sugar and half splenda)
1 1/4 cups water
3 Tbsp cornstarch
4 cups sliced, peeled apples (I used some granny smiths I had)
1/2 tsp ground cinnamon
1/4 tsp ground allspice
3/4 cup quick oatmeal
1/4 cup brown sugar
1/2 cup flour
1/4 cup butter

Combine 2/3 cup sugar, cornstarch, cinnamon and allspice.  Toss with apples.  Put in slow cooker and add water.

Combine remaining ingredients until crumbly and sprinkle over apple filling.

Cover.  Cook on low 2-3 hours.  I actually cooked it about 4 hours on low. 

It turned out really great.  Would've been better with some ice cream, but there was no room in the freezer.  We really need to find a MH -- so we have a bigger fridge/freezer of course...

Other than that, not much news.  Gathering things up in the RV for me to head back to Austin on Sunday morning. 

I'm trying to figure out where to start on emptying the house when I get back.  I think I'm going to dive into the craft/sewing room and get it cleaned out.  Then I can have a craft/sewing yard sale when it gets a bit warmer.  Maybe if I focus in one room it will feel like I'm making more progress.

  1. The Apple Crisp Recipe sounds great, but I try to stay away from sugar. Brown sugar is just white refined sugar with molasses. Some folk are allergic to the sulfites in molasses.

    I can't use Splenda, as it gives me hives. So I try to stick to xylitol, honey or stevia.

    The yard sale will be a lot of work, but with a well-advertised, specialized sale, just for crafts, you should sell out quickly.

    I always have way too many different things in my yard sales.

  2. Since Johnny's pre-diabetic and there's a strong tendancy to diabetes in my family, I'm trying to find ways to reduce sugar intake -- although I'm personally not too worried about it otherwise. I use splenda because it's easy to substitute, but have been wanting to experiment with stevia. Not familiar with the other ones.

  4. The BEST way to get rid of stuff to empty out a house, is use a bulldozer! LOL! When you start pulling stuff out of the drawers, cabinets, and closets, you're gonna wish you had taken my advice! :)

    Cleaning out one room at a time should make you have a feeling of accomplishment.
